In a large oven-safe skillet, melt 2 tablespoons of butter over medium heat.
Season both sides of the chicken breasts with salt, pepper, paprika, and dried thyme.
Add the seasoned chicken to the heated skillet and sear for about 4-5 minutes on each side.
Once browned, transfer the chicken to a plate and set aside.
In the same skillet, add the remaining 2 tablespoons of butter, minced garlic, broccoli florets, sliced carrots, and diced bell peppers. Sauté for approximately 3-4 minutes.
Return the seared chicken to the skillet, placing it atop the sautéed vegetables.
Spoon some of the sautéed veggies over the chicken, then transfer the skillet to the preheated oven.
Bake for 20-25 minutes, or until the chicken is thoroughly cooked.
Once cooked, remove the skillet from the oven and allow it to rest for a few minutes.
Garnish with freshly chopped parsley before serving.
Notes
Serve directly in the skillet for a rustic look, or plate individually for an appealing presentation.
