Instructions
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly blended.
In a separate bowl, crack the large egg and beat it lightly with a whisk. Add the whole milk, pure vanilla extract, and melted butter. Whisk until smooth.
Slowly pour the wet ingredients into the dry ingredients, stirring gently. Mix until just combined, leaving a few lumps.
In a deep pot or heavy skillet, heat oil over medium heat until it reaches 360°F (182°C).
Using a spoon or small cookie scoop, drop tablespoon-sized balls of batter into the hot oil, frying only a few at a time.
Fry for 2-3 minutes on one side until golden brown, then gently flip to fry the other side.
Remove the beignets with a slotted spoon and transfer to a plate lined with paper towels.
Dust the beignets with powdered sugar before serving.
