Begin by preparing a microwave-safe bowl. Combine the creamy peanut butter and honey (or maple syrup) in the bowl. Heat the mixture in the microwave for about 30 seconds to 1 minute, or until it's soft and easily stirrable. Stir the mixture together until it becomes smooth and well blended.
Once mixed, add in the unsweetened cocoa powder, vanilla extract, and a pinch of salt to the peanut butter blend. Mix thoroughly to ensure all ingredients are fully incorporated.
Take a large mixing bowl and add the rolled oats. Pour the creamy peanut butter mixture over the oats. Using a spatula or wooden spoon, stir vigorously until every oat is coated evenly with the mixture.
Gently fold in the chocolate chips, making sure they are distributed evenly throughout the oat mixture to enhance every bite.
Take an 8x8 inch pan and line it with parchment paper. Make sure the paper hangs over the edges slightly—this will help when removing the bars later.
Transfer the oat mixture into the lined pan. Using a spatula or your hands, press the mixture down firmly and evenly, ensuring it is tightly packed for the best bar structure.
If you’d like, sprinkle crushed nuts, coconut flakes, or additional chocolate chips over the top of the mixture. Press them down gently to adhere them to the bars.
Place the pan in the refrigerator and let the mixture cool for at least 2 hours, allowing it to set properly.
Once the bars have set, lift them out of the pan using the parchment paper overhang. Place them on a cutting board and slice into squares or rectangles, depending on your preferred serving size.
