In a medium mixing bowl, combine the shredded chicken, shredded mozzarella cheese, softened cream cheese, minced garlic, chopped parsley, paprika, salt, and black pepper. Mix thoroughly until all ingredients are evenly blended and the mixture creates a creamy filling.
On a clean, flat surface, lay out each flour tortilla. With a spoon, divide the chicken mixture evenly among the tortillas, spreading it generously along the center of each one.
If you want an extra crunch and nutritious boost, sprinkle the diced bell peppers or fresh spinach evenly over the chicken mixture on each tortilla.
To wrap, fold the left and right sides of the tortilla inward, then start from the bottom to roll it tightly until the filling is secure inside. Repeat this process with the remaining tortillas.
Heat the olive oil in a large skillet over medium heat. Once hot, carefully place the wraps seam-side down in the skillet. Cook for about 3-4 minutes or until the wrap is golden brown and crispy. Using tongs, carefully flip the wraps and cook for another 3-4 minutes on the other side until crispy and you can see melted cheese seeping out.
Remove the wraps from the skillet and let them cool for a minute before slicing each wrap in half diagonally for an appealing presentation.
