Instructions
In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until the mixture is well combined and smooth in texture.
Line a baking sheet with parchment paper to ensure easy removal of the blueberry bites later.
Take a fresh blueberry and dip it into the Greek yogurt mixture, making sure it is fully coated. For better handling, you can use a fork or a skewer to dip the blueberries.
Place the yogurt-covered blueberry on the prepared parchment-lined baking sheet. Repeat this process with the remaining blueberries until all are coated in the yogurt mixture.
If you want to add an extra layer of flavor, melt some dark chocolate chips in the microwave in short bursts (15-20 seconds) or use a double boiler until smooth. Drizzle the melted chocolate over the coated blueberries for a delicious finish.
Carefully place the baking sheet in the freezer, allowing the blueberry bites to freeze for at least 2-3 hours, or until they are completely solid.
Once the blueberry bites are frozen, you can transfer them to an airtight container or a zip-top bag. Store them in the freezer for quick and easy snacking whenever you crave something refreshing.
