Instructions
Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
In a mixing bowl, crack all 6 eggs and whisk until frothy.
Stir in the cottage cheese until creamy and uniform.
Add shredded cheddar cheese, diced bell peppers, and chopped green onions, folding gently.
Season with garlic powder, salt, black pepper, and smoked paprika, folding gently to combine.
Pour the mixture into the muffin tin, filling each cup about three-quarters full.
Bake for 18-22 minutes until set in the center and golden on top.
Remove from the oven and let sit for a few minutes before running a knife around the edges.
Lift the muffins out and cool on a wire rack.
Notes
Serve warm and garnish with additional green onions and avocado slices for added flavor.
