Delicious Teriyaki Chicken Rice Bowl

2 boneless, skinless chicken breasts, thinly sliced

1 cup uncooked jasmine rice

2 cups water or chicken broth

1 cup broccoli florets

1 bell pepper (choose red or yellow), sliced

1 medium carrot, julienned

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

Sesame seeds, for garnish

Chopped green onions, for garnish

Salt and pepper, to taste

Instructions
 

Begin by thoroughly rinsing the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 2 cups of water or chicken broth. Bring this mixture to a boil, then lower the heat to a simmer. Cover the saucepan and let it cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed. Remove it from heat and fluff with a fork. Set aside.

    In a small bowl, create the teriyaki sauce by whisking together the soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Set this sauce aside for later use.

      In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add the sliced chicken to the pan, seasoning it with a sprinkle of salt and pepper. Cook the chicken for approximately 5-7 minutes, stirring occasionally, until it turns golden brown and is cooked through.

        Pour the prepared teriyaki sauce over the cooked chicken in the skillet. Stir well to ensure the chicken is evenly coated. Allow the mixture to simmer for an additional 2-3 minutes, which will enable the sauce to thicken slightly and infuse the chicken with flavor.

          While the chicken is cooking, prepare the vegetables by steaming the broccoli florets, sliced bell pepper, and julienned carrot until they are just tender, which should take about 3-5 minutes. You can steam them in a basket over boiling water or use a microwave-safe dish with a splash of water.

            To assemble the rice bowls, start with a generous scoop of fluffy jasmine rice at the bottom of each bowl. Layer the teriyaki chicken on top, followed by an assortment of the steamed vegetables.

              Finish off the dish by garnishing with a sprinkle of sesame seeds and a handful of chopped green onions before serving to enhance both flavor and presentation.
