Set your air fryer to 400°F (200°C) and preheat it for approximately 5 minutes.
Arrange the marinated chicken pieces in a single layer in the air fryer basket. Cook for about 10-12 minutes, shaking the basket halfway through the cooking time.
On a clean surface, lay out one tortilla wrap. Evenly distribute shredded mozzarella cheese, followed by the crispy chicken, a handful of fresh baby spinach, and halved cherry tomatoes.
Carefully start rolling the tortilla from one end, ensuring the fillings stay securely inside. Roll tightly but not so tight that the ingredients squish out.
Place the rolled wraps seam side down in the air fryer basket. Lightly spray the tops with olive oil. Air fry at 400°F (200°C) for 5-7 minutes, or until they are golden brown.
Once cooked, remove the wraps from the air fryer and allow them to cool for a minute. Slice each wrap diagonally for a beautiful presentation. Serve warm alongside ranch dressing for dipping, if desired.
