Instructions
In a medium mixing bowl, combine the diced apples with a light sprinkle of ground cinnamon, tossing gently to coat. Set aside.
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, 1/2 teaspoon of ground cinnamon, freshly grated nutmeg, and salt until well combined. In a separate bowl, blend the milk, egg, and vanilla extract.
Pour the wet mixture into the dry ingredients. Stir gently until just combined. Carefully fold in the diced apples.
In a deep skillet or frying pan, heat vegetable oil over medium heat until it reaches approximately 350°F (175°C).
Using a spoon or a small ice cream scoop, drop spoonfuls of batter into the hot oil. Fry in small batches for about 2-3 minutes on each side, or until golden brown. Transfer cooked fritters to a plate lined with paper towels.
While the fritters are still warm, dust them with powdered sugar.
