Instructions
Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.
Bring a pot of water to a boil and steam the cauliflower florets for about 8 to 10 minutes, or until they are tender when pierced with a fork. Drain well and allow them to cool for a few minutes.
Once the cauliflower has cooled slightly, transfer it to a clean dish towel. Gather the edges of the towel and twist to wring out as much moisture as possible. The drier the cauliflower, the crispier the tater tots will be!
In a large mixing bowl, combine the drained cauliflower with shredded cheddar cheese, almond flour, grated Parmesan cheese, eggs, garlic powder, onion powder, and a generous pinch of salt and pepper. Use a fork or your hands to mix until everything is well incorporated into a cohesive mixture.
With your hands, take small portions of the mixture and shape them into bite-sized tater tot shapes. Place each formed tot on the prepared baking sheet, ensuring they have a little space between them for even cooking.
For a delightful crunch, lightly spray the tops of the tater tots with cooking spray or brush them with a touch of olive oil.
Bake in the preheated oven for 25 to 30 minutes, flipping the tots halfway through to ensure they become golden and crispy all around.
Once baked, remove the tater tots from the oven and allow them to cool on the baking sheet for a few minutes before serving to allow them to firm up.
