2mediumapples (preferably Granny Smith or Honeycrisp), peeled and finely diced
1cupall-purpose flour
12cup granulated sugar (divided)
1teaspoonbaking powder
12teaspoon ground cinnamon (plus extra for dusting)
14teaspoon ground nutmeg
14teaspoon fine salt
12cup milk
1largeegg (lightly beaten)
1teaspoonpure vanilla extract
as needednonevegetable oil (for frying)
as needednonepowdered sugar for dusting upon serving (optional)
Instructions
In a medium mixing bowl, combine the finely diced apples with 1 tablespoon of granulated sugar and a light dusting of cinnamon. Allow the mixture to sit for approximately 10 minutes to let the apples release some of their natural juices.
In a large mixing bowl, whisk together the all-purpose flour, remaining granulated sugar, baking powder, ground cinnamon, ground nutmeg, and fine salt until well blended.
In a separate bowl, whisk together the milk, lightly beaten egg, and vanilla extract until fully combined.
Gently pour the wet ingredients into the bowl with the dry ingredients and stir with a spatula or wooden spoon until just combined. Be careful not to overmix; the batter should remain slightly lumpy. Fold in the prepared apple mixture gently.
In a deep saucepan or heavy-bottomed skillet, add enough vegetable oil to reach a depth of about 2 inches. Heat the oil over medium-high heat until it reaches a temperature of 350°F (175°C). You can test the oil's readiness by dropping a small amount of batter into it; if it sizzles and floats to the top, it’s ready.
Using a spoon or a small cookie scoop, carefully drop spoonfuls of the apple fritter batter into the hot oil, making sure not to overcrowd the pan to maintain the oil temperature. Fry the bites in batches for about 2-3 minutes on each side, or until they turn a beautiful golden brown and are cooked through.
Once fried, transfer the apple fritter bites to a plate lined with paper towels to absorb any excess oil.
For an extra touch of sweetness, if desired, dust the fritter bites with powdered sugar just before serving.
Notes
For an indulgent twist, drizzle with honey or warm caramel sauce before serving.
